Remember when I told you that you would be seeing more recipes using our homestead chicken?
Well, here is one that Klaire is crazy about these days – hence the name, Klaire’s Favorite Homestead Chicken Salad!
This is one of those recipes that’s so simple, it’s really not even a “recipe” y’all. What makes it even better? It’s super fast to mix up & perfect for a quick lunch. I like to make up a huge batch with our leftover, roasted chicken. The roasted chicken is what adds even more tasty goodness to the salad.
Another tip for extra flavor – use BOTH white & dark meat! In my opinion, too often, people turn their noses up at the dark meat. If you do, you are missing out on loads of flavor!
With only 5 ingredients (& a dash of seasoning), you’ll be making this recipe in no time.
It’s delicious served alone, with lettuce, or wrapped up. Klaire & I even like to scoop it up with fresh, crunchy celery sticks for a snack.
Here’s how I like to make Klaire’s Favorite Homestead Chicken Salad:
1 lb roasted chicken meat, chopped
1/2 small onion, finely chopped
1 stalk celery, chopped
1 medium Granny Smith apple, chopped
1/2 cup avocado oil mayonnaise (if I don’t have my own made up, I use THIS ONE)
1/2 tsp garlic granules (or powder if you don’t have granules on hand)
Pepper to taste
- After prepping & chopping ingredients, mix it all up till well combined.
- Eat right away or allow to set over night in fridge for even more flavor!
